Salmon croquettes are a southern classic. Stemming specifically from the Gullah Geechee people in Charleston, South Carolina. The word "croquettes" is french and has its New Orleans influence as well. These salmon croquettes are lightly pan-fried and panko breaded. The salmon is minced and infused with onions, garlic, bell peppers, and creole herbs. This entree is served with (2) golden, palm-sized croquettes.
